Maintaining Wednesday Wisdom with plant-based friendly nutrition as I continue in the @favchef contest. Sometimes finding items beyond soy, gluten and artificial ingredients can be challenging.

Organic Quinoa is a great option.  It is high in protein and easy to digest.

This Mushroom Quinoa recipe is quick and easy.  I created it to build the immune system and boost brain function. Garlic, Jalapeno and Sweet Peppers, Lime, Spices and Coconut oil (added as a finishing touch) flavor this Mushroom Quinoa dish.

Top with spiced sour cream, vegan or clean dairy – your choice.

Tip: Quinoa is best cooked with 2 parts water or broth to 1 part quinoa.
