Today I needed to get my legumes, veggies and fruit quickly and for some extra comfort.
Ingredients: 1 cup of Butternut Squash chopped with seeds 1/3 Jalapeno 1/2 Lemon peeled 3/4 cup Water 1 – 15.5 oz can of drained Chickpeas 1 – small Apple sliced 1 – Garlic clove sliced Garnish with spring onion and cilantro
1. Steam Butternut Squash in Water until tender on medium heat 2. Drain excess water from Cooked Butternut Squash and enjoy real vitamin water 3. Add drained Chickpeas and Butternut Squash to food processor 4. Add Apple, Garlic, Lemon and splash of drained Chickpeas water to food processor 5. Blend til smooth at lower variable speeds
You may have to stir and blend for 1 to 3 minutes depending upon your food processor. I used an older Vitamix.
Cut veggies and fruit for your comfort tray and add crackers or matzah. If you want extra flavor, sprinkle old bay or spices. But, try the hummus before you do.
This recipe is vegan and oil free. Super delicious. I created this with children of all ages in mind. And, it was right on time as another Mom called in need.

I highlighted Honduras because of pro bono clients and part of my family is from Honduras, very impacted by #environmental concerns.

True Beauty is Helping Others and my reflection of the Day!
The day started with the weird Daylight Savings Time and I forgot! For those who overslept or are catching up – I was there with you. I actually took a nap to get my hour back!!!
Fortunately, I was able to lead two Facebook.com/cleanseyourcache sessions – Calm°15 ™ on Instagram and donated a Self-Care Sunday 30, to my #cleanseyourcache community circle of people from around the World supporting each other via Zoom.
I also filmed a new recipe and will share soon. A bit later than planned because I am volunteering to help a little girl thrive. I created a couple recipes for her today and it was fun! I used the ingredients before, but I had to tailor it to her current diet and research.
Unknown fact – after I used food to help recover from autoimmune issues, I pitched a Network an idea for GIFT (Gluten Intolerant Nut Free Tables). They said No. I wanted a restaurant that everyone could eat stress free.
Creating special health sensitive recipes is something I’ve done as a gift for people for years. But, today, I formally created and donated the first GIFT™ #veganrecipes to this little girl. It makes me so happy to help! I recommended things that helped me, research, and a certification I’m completing in nutrition.
So, thanks Eleanor Roosevelt, I received strength and new thoughts to help others and myself. I told my class to act with Courage this week and I did so in serving GIFT virtually. A table for one special child whom I’m thankful to help thrive.

2. Created New Recipes. Excited to share the comfort foods this weekend.
3. Conducted a Conference Call on #Gratitude with a Senior Citizen needing Support. I learned from his practice. He tracks 5 items per day in his gratitude journal.
4. Submitted a followup to the Morning Petition with ALL Documents Accepted.
5. Talked to my pro bono client in detention and her family.
6. Walked to the grocery store and shopped.
7. Designed and Delivered 75 minute talk on Immigration in America at a congregation and recruited volunteers to help immigrants.
8. Gifted an one-on-one @cleanseyourcache session to donate to a child in a thriving plan. I teared up with Joy seeing this child happy. And, listening to the feedback from the parent touched my soul.
9. I am sending thank you notes in between to those who supported and continue to support my #favchef win. I don’t know the name of every supporter, but I thank you. Please accept this THANK YOU! This weekend is 2 for 1 HERO Votes with a percentage of proceeds benefiting #feedingamerica
10. Scheduled a conference call for climate advocacy on a global scale and I’m super thankful as climate change and resilience are so important to me.
11. A newspaper published a story on my volunteer immigration service. I have not seen the article, but a friend sent a text. When I have time to track the article, I’ll share more.
I sigh thankful as reflect and thank about my Mom pushing me off the phone to get ready for my presentation before the congregation.

Shamefully wrinkled peppers, garlic, and butternut squash brought to life with leftover salsa, coconut oil and spices with pasta in a single vegan pot resulted in this Butternut Squash Pasta made a spontaneous bunch of deliciousness. #challengeaccepted
Sometimes we throw out perfectly good vegetables because of how they “look.” But, they are fine. Thinking less about the perfection of a vegetable or fruit and more about its benefits – may help along the wellness path.
Adding cold water to vegetables will bring them back to life.
For those new to my page, I’m Arlene and I started cooking seriously to help my Dad recover from his first bout with cancer. It worked. I was so inspired, I tried out for Master Chef and was invited back and then invited by Fox. I passed because I didn’t want to tell the world my Dad had #cancer. He approved, but I didn’t want to talk about his condition on National TV.
Unfortunately, my Dad passed away 10 years after his recovery from a second form of unrelated cancer. He followed a different regimen and it didn’t help him. He passed away in a matter of months.
Since processing all that happened to my Dad, I’m more determined to help people with their food rituals and even my social justice volunteer work of reuniting families.
